Hummus is much popular in the Middle East and Mediterranean countries. It is traditionally made dip or spread which is eaten with nachos, tortilla chips, or even with fried fish, chicken, etc. It is an important part of the Mezze platter prepared in most of the Mediterranean countries.
 
 
I love the colorful hummus more than the regular one which is made with just chickpeas. The colorful hummus looks good as well as tastes good. The color is added with natural ingredients like beetroot, bell pepper, and coriander.
 
 
Hummus can be prepared and stored in the refrigerator just like any other dips that we have. It is made with basic ingredients that one can easily obtain.

Ingredients

  • 1 cup boiled chickpeas

  • 3-4 garlic pods

  • 2 tsp Tahini (Almond/Cashew butter can be used instead of Tahini)

  • 1/2 Lime juice

  • 1/4 cup 1/4 Chopped beetroot

  • 1/2 bell pepper

  • 1/4 cup mint, coriander

  • 1 green chili

  • Olive oil

  • Salt to taste

Method

  • To make the Basic hummus, take the ingredients like boiled chickpeas, garlic pods, Tahini, lime juice, and salt as per taste into the mixer jar. Grind all the ingredients into a smooth paste.
  • To loosen the paste, add 2-3 tsp of olive oil.
  • To make Beetroot hummus, add chopped beetroot with all the basic ingredients and grind into a smooth paste.
  • To make Roasted Bell pepper hummus, take half red bell pepper and roast it on the gas until the outer skin of the bell pepper is burnt. Keep it aside to cool.
  • Once cooled down, remove the skin and chop it into small pieces and add it in the mixer jar with all the basic hummus ingredients and grind it into a smooth paste.
  • To make Green Chutney hummus, add mint and coriander 1/4 cup each and 1 green chili to the basic hummus ingredients and grind it into a smooth paste.
  • Drizzle some olive oil over it to avoid dry coating on the top and garnish with some chili powder.

Notes

  • Hummus can be made ahead of time and frozen.
