The coffee cake recipe is easy to make at home. As you need some handful of ingredients and you do not have to worry about the frosting. 
 
 
 
This coffee cake is made without layering in frost over it. Adding eggs makes the cake fluffy and soft. Serve a generous piece of cake with some hot brewed coffee as an evening snack.

Ingredients

  • 1 cup + 1 tbsp maida

  • 3/4 cup oil

  • 3/4 cup sugar

  • 2 eggs

  • 4 tbsp milk

  • 1 tsp vanilla essence

  • 1 tbsp instant coffee

  • 1 tsp baking powder

  • 1/4 tsp salt

  • Roasted and chopped almonds

Method

  • Mix the milk and vanilla essence. Add coffee in it mix well and set aside.
  • In a mixing bowl add the eggs, the powdered sugar, and oil then beat it well.
  • Use a blender if you have or just use a regular whisk. Whisk until the color becomes pale yellow.
  • Add the milk, vanilla essence, and coffee mix and whisk the mixture altogether again. The color will turn into a nice deep brown.
  • Add in the dry ingredients, maida, baking powder, and salt. Mix well ensuring no lumps are formed. The cake batter is ready.
  • Pour the batter into the lined cake tin, garnish it with the roasted and chopped almonds. Bake this for 30 mins at 180 degrees.
  • Garnish it generously with some icing sugar.

Notes

  • Before making the batter, grease and line a cake tin or loaf tin prior and also preheat the oven to 180 degrees for 10-20 mins.
